In Full Force - a true indicat-tion that spring has arrived is rhubarb. Every year around this time, the ever producing "pie plant" comes up in full force. For me, rhubarb is an indication that summer is only weeks away. Rhubarb is a very versatile fruit which can be used alone or with other fruits in pies, fruit drinks, sauces, desserts, jams, jellies and pickles. Unsweetened rhubarb contains very few calories It is a good source of Vitamin C and an excellent source of potassium. Rhubarb is also a source of dietary fibre. Choose rhubarb that is red in color with stalks that are small, crisp and firm. For the best results, use rhubarb the day it is picked or purchased. If this is not possible, keep rhubarb stored in a plastic ’ bag in the refriger­ator. Rhubarb freezes well. Remove rot oends, wash the stalk, cut into 2 cm lengths and pack in freezer bags. No sugar is required. Freeze for the size of your family. If freezing space is limited, freeze cooked rhubarb sauce, sweet­ened to taste. USE IT ALL! Rhubarb leaves contain toxic amounts of oxalic acid and should never be eaten. But, they do have a use. Rhubarb leaves boiled in aluminum pants, leave them shining clean. They also clean and shine copper-bottom pots. Chop leaves into small pieces and cover with boiling water in a large, old pot. Put copper-bottom pots to be cleaned into the larger pot and simmer 10 to 15 minutes (a little water in the copper-bottom pot will hold it in place). Dull copper will shine without polishing in aboaut 5 minutes, but badly crusted spots may not come clean. The stalk works just as well, but why wate the edible part? Hoy and Kipp Craig, son of N.J. Craig and Mrs. Nona Craig, chose for their wedd­ing day. The day was trade to order. The sun was shining and the wind wasn’t blow­ing. - Patriarch Nyal Fletcher performed the marriage ceremony in the Cardston Temple for time and eternity. The bride's attendants were her sister Joanne Hoy as maid'of honor; her s’ister Jennifer Hoy, room mate Carmen Pearson of Edmonton and Sheila Berry of Cardston as bridesmaids. The groom's attendants were Tony Yee of Lethbridge as best man and John Craig and Lockey Craig of Edmonton and Rob Hoy, brother of the bride, as groom smen. Ri chard Garside of Raymond was Master of Ceremonies for the family dinner held in Lethbridge with Kipp's mother, Nona Craig as hostess. A Calling Reception was held Sat­urday evening from 6:30 to 8:30 p.m. in the Magrath High School Gym. The kitchen and food was under tiie direction, of Betty Harris and every­thing was lovely. The decorators were Linda Stoddard and Carol Thompson from Cardston. Host and hostess for the evening were VerDell and Linda Saxton of Spring Coulee. • Greeting the guests at the door . were Bill & Marj Sallows of Drum— heller, great uncle and aunt of Donna's. Heidi Saxton attended the guest book while three of Donna's cousins from Drumheller were in chage of the gift table. Parents of the bride and groom together with their attendants joined in receiving the friends and relatives who called to offer congratulations.
