From selecting the right equipment to labell­ing and storing the finished product, iiome canning is a precision business that requires exacting care. Even the simpl­est steps must be carefully completed such as choosing the right canning jars. Proper canning jars are a necessary and w.orthwhile expense. In some ways you can almost consider them an investment for they are useable many times over. They _nsure your canned products will survive in the abest possible condition and they eliminate most of the safety risks assoc­iated with home canning. In most cases, it is best to avoid regular consumable containers such as mayonaisee and peanut butter jars. They are not made to hold up under the heat and pressure extremes of home canning nor are their lids usually airtight. The most common canning jar in Alb- . erta is the widemouthed Mason jar. It is a type of rounded square jar that comes in assorted sizes. Modern Mason jars usually have a metal lid edged with a sealing compound and a metal screw band. Some canning jars have a single unit comp­rising both the lid and crew band. In either case the lid should be preplaced each time the jar is used to ensure you obtain a perfect seal. Canning requires an eye for detail. ‘ Each jar you use should be inspected for nicks and cracks and anything else which could damage the seal. If you find you have a substandard jar on hand - throw it away. It's not much use for preserv­ing anything but pennies. Remember to replace the metal lids during each canning operation. If you are using older jars with rubber rings, they have to be replaced too. Canning season is here and there's a bounty to be preserved if you can with care.
