It's an easy and delicious way to prepare food, but certain precautions must be taken to avoid a potentially deadly illness, in which those infected suffer fever, diarrhea, vomiting, impaired kidney function, or complete kidney failure. The culprit is a toxin-producing strain of Escherichia coli called 0157:H7. It contaminates about one to four percent of raw beef, pork, poultry and lamb. Ground beef poses a greater risk than a solid ‘piece of meat, says Dr. Hans Luyken, program manager with the livestock inspection branch of Ontario's Ministry of Agriculture and Food. "Ground beef is handled more, it's put through a grinder, the fibres are opened up - all this increases the risk of contamination." The problem is worse in surrrrer, partly because meat can't always be kept cool during transport. "At room temperature, E. coli double every 20 minutes," says Dr. Karl Weiss of the bureau of microbial hazards in Ottawa's Health Protection Branch. Little is known about how or why the organism gets into the meat in the first place, although Canada is in the forefront in research and hosted the first international conference on the infection. What is known -is that children under five and elderly people are the most frequently reported cases. Most people who eat infected meat experience little more than mild diarrhea. While complications from the infection can be deadly, there's no need to panic and swear off hamburgers for life! E. coli, salmonella and other potentially harmful germs are complete ely destroyed when meat is well cooked. Be cautious, both at home and in restaurants. With sone common sense and a little extra effort, you can enjoy hamburger just as much as e^ser. The following are some pointers for food safety: 1. When buying groceries, make ground beef one of the last items you pick up and one of the first you put in the fridge. 2. Thaw meat in the microwave or overnight in the fridge - NEVER AT ROOM TEMPERATURE. In the fridge, keep meat on a bottom shelf, where there is no.chance of its juices dripping onto other foods. 3. Before and especially after handling raw meat, WASH HANDS WELL in warm water with soap for a minimum of 20 seconds. 4. Keep a plastic cutting board specifically for jnsat.' Don't use wooden utensils; it's difficult to wash bacteria out if the pores. 5. Don't make hamburger patties too thick, or they won't cook through to the middle. 6. Store uncooked patties in a single layer in the fridge. Don't stack them, or the middle >nes won't get cool for hours. '. When barbequing, scrub the grill clean with a wire brush and preheat it well to eliminate existing bacteria. 8. When you think the hamburgers are cooked through, break. one open to make sure there is NO PINK inside. . 9. Don't put cooked burgers back on a plate used for raw ones. 10. BASEBALL NEWS The Southchief Jr. Little League All Scars (13 yr. olds) completed a very successful season in Moose Jaw last week as they lost the championship game to Edmonton Confederation Park in The Prairie (Alta, and Sask.) Playoffs. They had defeated Lethbridge All Stars 2 straight games the week before to advance as the #1 seed from the Lethbridge District at Moose Jaw. They had defeated Calgary West, Medicine Hat, Regina, Edmonton Millwoods, and defending champs Calgary Bour- idge to reach the final. Although only. 1 win away from going to the Canadian Championship they did very well and can be proud to be the 2nd best team in Alberta - Saskatchewan for that age. Even .hough the sport has been played in .Alberta as early as the 1800's, the last decades growth lias been astrinortiical. In the past few years the number of players registered with the Alberta Soccer Association has grown to an impressive 54,000. A substantial increase from the 38,000 player registration in 1984. It is the responsibility of Alberta Soccer Association to promote the sport of soccer and foster its growth and development throughout Alberta. One' way in which the Association meets this goal is by coordinating Summer Soccer Schools throughout the Province. The Sumner Soccer Schools provide youngsters with an opportunity to gain knowledge and practical experience in soccer. Their skills are developed through instruction from certified coaches and professional players from the Canadian Soccer League. The program not only develops skills, but also affords children an opportunity to experience a week of fun-filled activities with other children their own age.
