Balderson A beautiful wedding ceremony was held on November 9, 1991 when Catherine Norton and Brent Cahoon were united in marriage in the Cardston Alberta Temple. Denise Broadhead sister of the bride, was Matron of Honour and Mark Cahoon, brother of the groom was Best Man. A lovely dinner reception was held that afternoon in the Magrath LDS Stake Centre for family and close friends. Guests travelled from Edmonton, Calgary, Saskatchewan Idaho, Utah and Arizona. We appreciate the ladies who had such a nice shower for Cathy and all those who attended. This weekend saw Magruth Zenith and Pandas dominate the LCI 2Jth annual Green & Gold Classic basketball tournament played at the Civic Centre and at LCI. The Pandas won their game against St. Albert Bellrose 92-53 with Sandra Stevenson contributing 20 points. Paige Peterson with 16 points and Wendy Balderson with 14 led the Pandas to a 58-48 win over the Catholic Central Cittens. Saturday's championship game saw the Pandas win 64-53 over host LCI Clipper Queens. Bonnie Tollestrup took the lead in the victory game with 27 points. Pandas' Wendy Balderson was named Most Valuable Player for the girls' tournament. Meanwhile back at the hoop - the Zeniths advanced to the championship game by leading out over Airdrie Burt Church Chargers an impressive 101-81 in the semi-final. Mark Tollestrup had 26 points in that game. As luck would have it we pulled the earlybird game at 8:00 am against Cardston and we played with only eight plyers. In goal - Aaron Ragan; his team­mates: Anthony Haynes, Lee Hollingshead, Peter Lee, Shane Nishikawa, Shawn Ragan, Stan Rienguette and Russel Yoshihara. After 42 minutes of play and a few triple shifts we came away victorious with a score of 7-4. The goal getters - Peter Lee 5 Stan Rienguette 1, and Lee Hollingshead l(his first goal!). Add milk, flour, a pinch of nutmeg and beat together to make a thin batter. Melt butter in a large oven proof skillet and when quite hot, pour in batter. Place skillet in a 425 degree oven and bake until pancake is puffed, golden and curled at the edges, 20-25 minutes. If large bubbles form the first 10 minutes, pierce them with a fork. When pancake is baked, squeeze the juice of half a lemon over the surface and spoon the hot filling in the center. Fold over two sides and sprinkle with confectioners' sugar, if desired. Serve immediately. (2-3 portions) Apple Filling: 3 apples, 2 Tablespoons butter, 2 Tablespoons sugar, cinnamon - While pancake is baking, peel and slice apples. Saute fruit in butter.
