Jfí ««M M KITCHEN NOTES - DISTRICT HOME ECONOMIST Whole wheat flour supplies dietary fibres which is important for a nutritionally balanced diet. In many recipes you can substitute whole wheat flour for up to % the amount of all purpose flour. It's a good idea to try substituting whole wheat flour when baking muffins, crepes, cookies, yeast breads and quick breads. Use whie flour when baking cakes or light pastries. Brown sugar can replace white sugar with no measurement change as long as the brown sugar is well packed. Flavor and color of the product will be slightly different. One cup of honey ,will replace one cup of sugar as long as the liquid is cut by h cup. Decrease the oven temperature slightly as baked good will brown a little faster. To substitute maple syrup for sugar, use 1% cups of syrup for each cup of sugar and reduce the liquid by % cup. Kathy Bosse, D.H.E. Watch next week's paper for news from the District Agriculturists.
