Summary:[EN] Due to the current stagnation in the sales of the main aquaculture species of national interest, specie diversification is proposed as one of the possible alternatives to the continuous boom of aquaculture. Thus, the aim of this paper is to study possible species for this diversification and to compare the biometric and body parameters, the composition in macronutrients, the profile of fatty acids and the quality of the protein of species with recent aquaculture interest. Some of these species and reasons of study include the Seriola dumerili (Mediterranean seriola) for its fast growth, the Mugil cephalus (mullet) for its low production cost, or the Sparus aurata (sea bream) as well the Dicentrarchus labrax (sea bass) due to their current organic and fresh consumer perception, with species already on the market, such as sea bream, sea bass, trout, salmon, turbot, etc. Species that are widely produced or of greater economic interest in today's aquaculture. After the physical and chemical analyses, it has been found that most new species have very similar values, sometimes even higher than those of species already marketed in parameters such as biometric indices and macronutrients, which determine the quality of fish. The Seriola dumerili (Mediterranean seriola) the Sparus aurata (sea bream) as well the Dicentrarchus labrax (sea bass) organic, have values in amino acids and fatty acids that exceed those of the species already marketed.
