Summary:The text deals with the issue of food fraud, the importance of which is being seized at the international level. The solutions developed locally to remedy this are diverse and rely on an identity enhancement of specificities. Among the possible means, certification allows producers to come together and define quality requirements. But is it really an effective tool? At the same time, an agriculture promoting participatory democracy is developing to bypass the market economy. Examples come from fieldwork in Corsica, Yakutia (Republic of Sakha, Russia) and Italy. Le texte porte sur la question de la fraude alimentaire dont l’importance est saisie au niveau international. Les solutions développées localement pour y remédier sont diverses et s’appuient sur une valorisation identitaire des spécificités. Parmi les moyens possibles, la certification permet aux producteurs de se regrouper et de définir des critères de qualité. Mais constitue-t-elle un outil réellement efficace ? En parallèle une agriculture prônant la démocratie participative se développe pour contourner l’économie de marché. Les exemples sont issus du terrain corse, iakoute (République de Sakha, Russie) et italien.
