Summary:Turbot is a new promising marine flat fish well suited for the European market. Psetta maxima is especially well suited for the rearing with intensive aquaculture methods and can be kept at high stocking densities. In Germany these flatfish are dominantly bred in recirculation aquaculture systems (RAS). The closed RAS enables the farmer to keep all water parameters that are important for fish husbandry under control. These systems can guarantee husbandry with a high level of well being in every live stage of farmed fish species. However during the out-growing phase of turbot various rearing practices are necessary till market size of fish is reached. The routine maintenance practices support the overall growth and well being of fish. Nevertheless, some husbandry practices if done the wrong way can stress fish and thus their impaired their well being. Very recently the consumer awareness to buy products that originated from animals grown up free from pain and distress increased. This trend is noticeable in for the consumption of fish products from aquaculture farms. Hence the importance to determine stress inducing culture methods is growing, especially in the context of animal welfare, and to meet customer and animal needs. In this work the stress levels in fish were assessed by the determination of cortisol levels in plasma and culture water of fish. To evaluate the stress response of turbot these were exposed to handling stress, and cortisol concentrations in plasma and water samples of an unstressed group ( control) was compared to a stressed group (treatment).This was done at seven time points (0,0.5, 1,2,4,8,24h). The stressor included grading of fish after size and length during five minute air exposure. This procedure is known as a routine practices in aquaculture facilities. The results have shown a significant increase in plasma cortisol levels. Whereas for water cortisol samples no significant differences between groups was found.
