Summary:The results of technological research evaluation brewing qualities of cones pressed hops and pellets type 90 varieties of aromatic and bitter types widespread in Ukraine in the production conditions, pellets type 45, carbon dioxide and ethanol extracts of foreign production were presented. The delicate aromatic and aromatic hop’s of varieties Slavyanka, National, Zagrava and pellets type 90 made from them and pellets type 45 varieties Tradytsion, Spalt Selekt suitable for separate using in brewing were established. These kinds of hops and hop’s product, can be used to improve the taste of beer with collaboration other products processing of hop at observance certain technologies of hopped wort. Beer made from hops pellets, especially varieties Zagrava was too bitter, therefore the pellets for hopped wort need using with saving up to 10%. Independent using pressed cones hops and pellets of bitter varieties Alta and Hercules do not allows receiving bitter of beer excellent quality. Carbon dioxide and ethanol extracts of hops varieties Hercules for independent use in brewing are not suitable. We can recommend their use in combination with aromatic varieties, while respecting the particular technology of hopped wort.
