The necessity of testing the flour before buying was acknowledged by the manufacturers; for they provided a small wooden stopper or "tester" about an inch and a half in diameter in the head of every barr el. It was an interesting sight to see crowds of fishermen getting their winter's supply of flour, each smoothing out a spoonful of flour on the palm of his hand with his pocket knife and testing it frequently.
