Summary:toutin n POTATO TOUTONS: There is one delicious item of food which my aunt makes for us now and then which the whole family enjoys. This is a recipe which her mother, my grandmother used to use. These potato toutons are made in this fashion: Boil potatoes, using 9 or 10 large ones, depending on the size of the family. While the potatoes are cooking, cut up sufficient pork in very fine cube. Fry this but not too much. Don't let it get crisp. Mash boiled potatoes; mix in enough flour just to make the ingredients hold together; add the cubes of pork and the fat. Form into small cakes and brown in a hot oven about 400�. Watch closely so that they don't burn. Cook just long enough to brown them as the ingredients havealready been cooked. Experience will give the tastiest cakes.
