Summary:Dataset for the article Climate Performance, Environmental Toxins and Nutrient Density of the Underutilized Norwegian Orange-Footed Sea Cucumber (Cucumaria frondosa) (DOI:10.3390/foods12010114). The data is split into several different parts: A carbon dioxide equivalent estimation for the production of 1 kg edible orange-footed sea cucumber with an expected dredge fishery in Norway, processing with cooking and drying in Norway, and sea transport to retail in Shanghai, The People's Republic of China. Raw data on micro- and macro nutrients in orange-footed sea cucumber analysed with different methodologies used to assess the composition of lipids, fatty acids, protein, amino acids, water percentage, ash percentage, and several different minerals and vitamins. Nutrient density calculations to grade how the nutritional composition of the orange-footed sea cucumber compares with other food alternatives. Weight of whole and gutted orange-footed sea cucumber caught at Balsfjord, Northern Norway. Environmental toxins in orange-footed sea cucumber analysed with different methodologies used to assess the composition of metals and trace minerals (Ag, As, IAs, Cd, Co, Cu, Fe, Hg, Mn, Mo, Ni, Pb, Se, V) (analyzed by two different institutes), PAH (Polycyclic aromatic hydrocarbons), PCDD/PCDF (Polychlorinated dibenzo-para-dioxins/polychlorinated dibenzofurans) and nonortho-PCB, PCB (polychlorinated biphenyl), DDT (Dichlorodiphenyltrichloroethane), and PFAS (Perfluoroalkyl and Polyfluoroalkyl Substances). This dataset is connected to the interdisciplinary research project SECURE (Novel Marine Resources for Food Security and Food Safety) which investigate the potential of low-trophic marine species.
