The data is split into several different parts: A carbon dioxide equivalent estimation for the production of 1 kg edible orange-footed sea cucumber with an expected dredge fishery in Norway, processing with cooking and drying in Norway, and sea transport to retail in Shanghai, The People's Republic of China. Raw data on micro- and macro nutrients in orange-footed sea cucumber analysed with different methodologies used to assess the composition of lipids, fatty acids, protein, amino acids, water percentage, ash percentage, and several different minerals and vitamins. Nutrient density calculations to grade how the nutritional composition of the orange-footed sea cucumber compares with other food alternatives.
