Effectuer une mise à jour des méthodes d'analyse des protéines, lipides et glucides sur la chair des mollusques. Tenter de mieux comprendre la forte variabilité des résultats d'analyses biochimiques dans leur capacité à "expliquer" la matière organique (poids sec de chair de bivalve).
