Summary:Since the expansion of Crassostrea gigas cultivation, the quality of these cup oysters has been shown to vary quite a bit when they are marketed at the end of the year. Since the fattening of oysters depends in large part on the food they have available, we tried, with an eye to improving these bivalves, to encourage the nutritive possibilities of the environment where they are matured, the fattening ponds: hollow basins in flat and clayey plots of land. The former salt marshes of the Marennes-Oléron region, today almost all unused, are for the most part made over into oyster fattening ponds. Depuis l'extension de la culture de Crassostrea gigas, la qualité de ces huîtres creuses se révèle très variable au moment de leur commercialisation en fin d'année. L'engraissement des huîtres dépendant en grande partie de la nourriture dont elles peuvent disposer, nous avons essayé, en vue d'améliorer ces bivalves, de favoriser les possibilités nutritives du milieu où ils sont mis à l'affinage, les claires : bassins creuses dans des terrains plats et argileux. Les anciens marais-salant de la région de Marennes-Oléron, aujourd'hui presque tous désaffectés, sont pour la plupart transformés en claires à huîtres.
