Lipase-catalysed synthesis of palm oil-omega-3 structured lipids
Candida antarctica lipase A was applied to selectively remove saturated fatty acids from palm oil. Rhizomucor miehei lipase was then used to add EPA or ALA into the partially hydrolyzed palm oil to produce new palm oil structured lipids containing approximately 30% omega-3 fatty acids.
