Ireta Ruth Matkin passed away in Magrath on Saturday, August 4, 1990 at the age of 90 years, beloved wife of the late Charles Samual Matkin of Magrath. Ireta was born June 13, 1900 in Huntsville,Utah. She will be well remembered for the warm friendship and hospitality so freely given to all she met. Many people, as well as her family have made her house their home. She will be sadly missed by her six children; Kathleen (Harold) Anderson of Milk River, Gordon of Lethbridge, LeVaun (Johnny) Thompson of Spring Coulee, Nola (Paul) Madge of Milk River, Lucille (Jim) Blaxall of Calgary, Jim of Pincher Creek, and June of Lethbridge, 18 grandchildren, 24 great-grandchildren, four sisters, three brothers, and numerous nieces and nephews. Funeral Services will be held in the Magrath Stake Center on Thursday, August 9 at 2:00 p.m. Friends may meet with the family in the Relief Society Room from 1:00 to 1:45. In lieu of flowers, Donations nay be made to the Magrath Hospital Auxilliary. ALBERTA IS FULL OF BEANS! The following article was written by Linda St. Onge, PHEc, Foods and Nutrition Specialist, Home Economics Branch of Alberta Agriculture: Well, maybe not quite - but pulse crops are one of the important ‘'alternative” crops grown in Alberta. The attributes that today's consumer wants in her foods should have Alberta's pulse growers smiling from ear to ear. Legumes are low in fat and calories and contain no cholesterol. They're a good source of protein (combined with complementary foods); they're an excellent source of iron; they're high in fibre; and low in sodium. Legumes can be used in all sorts of trendy ethnic dishes; and to top it all off - they're economical! Dried legumes don't deserve the perception consumers are likely to have, which is that they are difficult to prepare. The first step is to rehydrate them. Wash the beans and discard any foreign matter or discoloured beans. Quick Soak Method; For each cup of beans, add three cups of water. Bring to boil and simmer for two minutes. Remove from the heat. Let stand for two hours. Discard soaking water. Overnight Method: For each cup of beans, add three cups of water. Let them soak for twelve hours. Discard soaking water. After soaking, the beans can be completely or partly cooked to use in your favourite recipes. Cooked beans are more then double the volume of dry beans. To help reduce flatulence, caused by the naturally present sugars which are dissolved into the cooking water, you might prefer to drain off the cooking water - but the tradeoff is that some of the water-soluble B vitamins will also be lost. When the beans are tender or almost tender, combine them with the other ingredients in your recipe and relax while they finish cooking. It's important to cook legumes until they are very tender, because some toxic compounds are present in uncooked beans. Be sure the beans are cooked before adding any acidic ingredients the recipe may call for, such as tomatoes, or the beans will not soften. You may wish to can or freeze cooked beans so they'll be all ready for use in recipes. To freeze, simply pack your freezer containers with the completely cooked beans and freeze them. To can them, you must use a pressure canner. Soak the beans as outlined above. Then pack hot beans into hot jars and fill the jar with boiling water, leaving one inch of headspace. Remove air bubbles, adjust the lids, and process at 15 pounds pressure (12 pounds in a dial gauge canner) for 75 minutes if you are using pint jars and 90 minutes if you áre using quart jars. Bean salads for summer are a perennial favourite. You might like to try Alberta beans in something a little different, such as hummus (a spicy dip made with mashed chick-peas). HOME CANNING TIPS A couple of years ago, I attended a Food Preservation Workshop at the University of Alberta for District Home Economists. We tested several different products and methods of food preservation and then evaluated them. I'd like to pass on to you some of the tips I picked up. For more detailed information on food preservation techniques you may want to give me a call. 1. Have you ever inhaled a pea or kernel of corn while trying to remove the air from a freezer bag? Try this neat tip. Fill the sink with cold water. Immerse the bag of food into the water to the top of the food. Twist the ends of the bag and seal it. The water forces all the air out the top. It's quick and easy. No more choking on corn kernels! 2. Do you have trouble getting metal lids to seal or are the lids bent or buckled after processing? A representative from Bernardin Lids informed us that metal lids are to be tightened only to "finger tip tight". If the lids are too tight, air from the jar cannot escape easily which can cause the lid to buckle or prevent a seal. 3. If you had problems with spoilage in your pickles last year, you may want to consider pasteurizing your pickles. Bernardir. has done extensive testing and found the processing the jar of pickles in 180 <>F water for one-half hour pasteurizes the pickles without making them too soft. To obtain and maintain the correct temperature you will need a thermometer. Do not allow the water to boil or the pickles will be too soft. If you don't have problems with spoilage, there is no need to process the pickles.
