People are trying to keep these boulevards looking nice and horse tracks make it difficult to do so. Whether your're camping or on a picnic, food is an important part of any outing. There are three points to consider for successful outdoor meals: simple meals, proper equipment, and safe storage. Menus Plan menus for each meal on the outing. Choose simple meals that require minimum preparation. This leaves the cook free to enjoy the day as well. Make sure your meals are nutritionally well-balanced. Follow Canada's Food Guide and include foods from all four groups (Breads & Cereals, Fruits & Vegetables, Meat & Alternates, Milk & Milk Products). Consider method of cooking, clean-up time and' limited refrigeration space. It's often easier to pre-cook foods at home, freeze them, then finish cooking them over the campfire or barbecue. This is especially handy for slow cooking meals like chicken or ribs. It's sometimes difficult to get the center cooked before the outside is burned. Try cooking them in the microwave first and finish them over a fire for a barbecued flavor. Equipment Whether it's a backyard picnic or a two week camping trip, the time to get ready is before you leave. Plan your equipment around your menu and bring only what you need. Keep it simple, light­weight and compact. Forget the extras, they only add weight and take up valuable packing space. Multi-purpose utensils come in handy - for example a cup can be used to measure and ladle; and a large spoon used to stir, ladle and serve. Many families have an "outdoor box” where they keep essentials such as knives, forks, spoons, plates, cups, tongs, can opener, fire starter and first aid kit. These items are never used at home. With this started, it's easy to pack you food and go and it's easier to put things away when you return home. Make a checklist of all the equipment you need. The outdoor kitchen has one drawback: you can't run back to the kitchen for those forgotten matches. So, double check the list before leaving home! Safe Storage and Handling Food storage is a special consideration in the outdoors. The lack of refrigeration and length of time between preparing the food and serving it increase the chance of food spoilage. The following tips can help you have a safe outing: - Keep hot foods hot and cold foods cold. Bacteria grow best between 30 degrees F and 140 degrees F. A portable cooler with ice is great for refrigeration. Pack it with cold and frozen food for longer storage life. - Eliminate leftovers, take only the amount of food your family will eat. Meat salad should not be held over from lunch to dinner. Food that was safe at lunch may spoil during the warm afternoon. - Choose your food carefully. Bacteria live best in warm climates and prefer food high in protein and moisture and low acidity. These include egg products, fish, poultry and creamed desserts. These should always be refrigerated. Eating outdoors is a great part of summer fun. Have a safe and enjoyable summer!WHERE IS JOHN WAYNE WHEN YOU REALLY NEED HIM? Beth Johnston, Community Health Nutritionist for the Health Units, has really summed up good eating habits in the following article: Whether you partake in Midnight Days, Whoop-Up Days, or Rodeo Days, there seems to be enough cowboys around to make one feel as if they had been transported back to a western movie set. Life was simple then, white hats for "good guys" and black hats for "bad guys". The white hats were always there to save the day. These days people are trying to apply the principle of white hats and black hats to food, you know, good food and bad food. Although it's tempting to have a nice, simple classification for food, it's not really appropriate. We have no "food heroes" galloping in to save the day. The latest food labelled as a "good guy" is oat bran. In the context of a healthy eating pattern it may help reduce cholesterol - that doesn't make it a superior food - the important part of the message in "in the context of". On the other side of the coin, let's look at the "bad guys". Surveys show that 45% of the American population stopped eating red meat and 36% cut out dairy products in the belief that they were improving their health by doing so. No one, except renowned nutrition expert, K.D. Lang, ever said to stop eating these products. Red meat is one of the best sources of iron, zinc and vitamin B12, and without milk, it's nearly impossible to get enough calcium from the foods we eat to grow and maintain healthy bones. I believe that the misinterpretation came about because nutritionists were cautioning against eating high-fat foods, but there is a vast array of lean red meats and a growing assortment of low-fat dairy products available. These should be regular features on your menu. Eating a wide variety of food, the main message of Canada's Food Guide, includes a Dairy Queen treat on a hot summer day or a corn dog at your favorite rodeo, a well as all those foods you usually associated with good eating habits. Moderation, not deprivation, is the good guy. Let's keep the bad guys on the movie sets. "I don't like him—he has ham on his breath."

Whether your're camping or on a picnic, food is an important part of any outing. There are three points to consider for successful outdoor meals: simple meals, proper equipment, and safe storage. Menus Plan menus for each meal on the outing. Choose simple meals that require minimum preparation. This leaves the cook free to enjoy the day as well. Make sure your meals are nutritionally well-balanced. Follow Canada's Food Guide and include foods from all four groups (Breads & Cereals, Fruits & Vegetables, Meat & Alternates, Milk & Milk Products). Consider method of cooking, clean-up time and' limited refrigeration space. It's often easier to pre-cook foods at home, freeze them, then finish cooking them over the campfire or barbecue. This is especially handy for slow cooking meals like chicken or ribs. It's sometimes difficult to get the center cooked before the outside is burned. Try cooking them in the microwave first and finish them over a fire for a barbecued flavor. Equipment Whether it's a backyard picnic or a two week camping trip, the time to get ready is before you leave. Plan your equipment around your menu and bring only what you need. Keep it simple, light­weight and compact. Forget the extras, they only add weight and take up valuable packing space. Multi-purpose utensils come in handy - for example a cup can be used to measure and ladle; and a large spoon used to stir, ladle and serve. Many families have an "outdoor box” where they keep essentials such as knives, forks, spoons, plates, cups, tongs, can opener, fire starter and first aid kit. These items are never used at home. With this started, it's easy to pack you food and go and it's easier to put things away when you return home. Make a checklist of all the equipment you need. The outdoor kitchen has one drawback: you can't run back to the kitchen for those forgotten matches. So, double check the list before leaving home! Safe Storage and Handling Food storage is a special consideration in the outdoors. The lack of refrigeration and length of time between preparing the food and serving it increase the chance of food spoilage. The following tips can help you have a safe outing: - Keep hot foods hot and cold foods cold. Bacteria grow best between 30 degrees F and 140 degrees F. A portable cooler with ice is great for refrigeration. Pack it with cold and frozen food for longer storage life. - Eliminate leftovers, take only the amount of food your family will eat. Meat salad should not be held over from lunch to dinner. Food that was safe at lunch may spoil during the warm afternoon. - Choose your food carefully. Bacteria live best in warm climates and prefer food high in protein and moisture and low acidity. These include egg products, fish, poultry and creamed desserts. These should always be refrigerated. Beth Johnston, Community Health Nutritionist for the Health Units, has really summed up good eating habits in the following article: Whether you partake in Midnight Days, Whoop-Up Days, or Rodeo Days, there seems to be enough cowboys around to make one feel as if they had been transported back to a western movie set. Life was simple then, white hats for "good guys" and black hats for "bad guys". The white hats were always there to save the day. These days people are trying to apply the principle of white hats and black hats to food, you know, good food and bad food. Although it's tempting to have a nice, simple classification for food, it's not really appropriate. We have no "food heroes" galloping in to save the day. The latest food labelled as a "good guy" is oat bran. In the context of a healthy eating pattern it may help reduce cholesterol - that doesn't make it a superior food - the important part of the message in "in the context of". On the other side of the coin, let's look at the "bad guys". Surveys show that 45% of the American population stopped eating red meat and 36% cut out dairy products in the belief that they were improving their health by doing so. No one, except renowned nutrition expert, K.D. Lang, ever said to stop eating these products. Red meat is one of the best sources of iron, zinc and vitamin B12, and without milk, it's nearly impossible to get enough calcium from the foods we eat to grow and maintain healthy bones. I believe that the misinterpretation came about because nutritionists were cautioning against eating high-fat foods, but there is a vast array of lean red meats and a growing assortment of low-fat dairy products available. These should be regular features on your menu. Eating a wide variety of food, the main message of Canada's Food Guide, includes a Dairy Queen treat on a hot summer day or a corn dog at your favorite rodeo, a well as all those foods you usually associated with good eating habits. Moderation, not deprivation, is the good guy. Let's keep the bad guys on the movie sets. "I don't like him—he has ham on his breath."
