The measure of a man's real character is what he would do if he knew he would never be found out. DISTRICT HOME ECONOMIST NEWS ITEM For all you jam makers, there's a new product on the market which may interest you - CERTQ LIGHT. Here are some answers to questions I have been getting about this product. WHAT IS CERTO LIGHT - it is a type of pectin that can be used to make jam with 1/3 less sugar and more fruit than traditional jams. Currently five kinds of jam can be made with Certo Lightstrawberry, raspberry, plum, peach and pear. More recipes will be tested this summer. How does the keeping quality of Certo Light jams compare to that of traditional jams? Jams made from Certo light contain less sugar than traditional jams and may be more susceptible to mold growth. A representative from General Foods said that Certo Light jams have a shelf life of a year like traditional jams. The difference is that boiling water bath processing is recommended for Cero. Light jams. A paraffin seal is also acceptable but the method of sealing the two-piece lids by filling the jSrs to 1/8 inch from the top and immediately putting on the lid to allow the heat from the jam to seal the jar is not recommended. The representative said they believe consumers do not sterilize jars and lids properly. Because of this, a little more care is required for Certo Light jams. Another difference between Certo Light and traditional jams is that the Certo Light products fades more quickly. Why do the Certo Light instructions recommend inverting the jars after 2 hours to suspend the fruit? If the fruit begins to float, the jars can be inverted to prevent this. The seal would be formed after 2 hours and inverting the jars would not endager the seal. Due to the higher proportion of fruit in the Certo Light product, the jam is thicker and sets faster. Traditional Certo jams recipes call for 5 minutes of stirring and skimming once the fruit is removed from the heat after its 1 minute boil. This step allows the fruit mixture to cool slightly and to prevent floating fruit. Certo Light does not have this step in the instructions. Certo has a HOTLINE available to consumers who have questions about their recipes or products. The toll free number is 1-800-268-7808 Foists Chips OLD Back to School SAVINGS!
