W to $3.95 CHINOOK HEALTH UNIT NEWS Salads & sandwiches using mayonnaise as one of the ingredients have been the source of food poisoning episodes many times and the mayon— aise is usually blamed. Studies have proven that the sooner mayon-aise is added the safer the food J A. A. Will be. Mayonnaise, salad dressing, mustard and ketchup must contain vinegar and quite often lemon or lime ^iCe ^Sva?dud' The P? Yalue of mayonnaise is usually, lower than 3.40, mustard and ketchup range below 3.70 and the pH value of vinegar is 2.65. Salmonellae and Staphylococcus need a pH value of at least 4.4 to grow. In mavon- 2f1Se4-u1One the Path°9ens will die in a few days. Potato and meat salads have teen the cause of many foodborne gastroentric episodes due to the excellent chance for the various ingredients to become contaminated with pathogens clinging to chopping boards, knives, choppers and human hands. Laboratory results have shown m the high-mayonnaise salads the pH values and bacterial counts were iower than in low-mayonnaise salads. The addition of a larger amount of pickle had a similar effect. The higher amount of egg added to salads increased both the pH and bacterial count. Sandwiches have received a lot of attention as potential health hazards because they are often made with mayonnaise and are frequently held at temperatures favorable for bacterial multiplcation. Tests have shown that coliform counts tended to decrease in saladtype sandwiches during holding periods. Staphylococci were at times numerous but few coagulose-positive types were detected and there was! no significant increase after holding the sandwiches for 17-20 hours. Sandwiches with eggs, ham or cheese as the main ingredient provide a more favorable pH value for. the growth of bacteria. Spreading mayonnaise on both sides of the meat used in meat sandwiches as well as marinating ingredients of salad type sandwiches with any type of acid dressing will discourage the multiplication of food poisoning bacteria. The use of acid dressing does not alleviate the need for proper refrigeration. * r I M.H.S.
