International audience The high sensitivity to sodium chloride of the Inuit population is explained throughout hypotheses taking into account the environmental factors as weil as the peculiar way salt is perceived through culture and traditional food consumption. L' acuité gustative exceptionnelle que présente la population Inuit vis-à-vis du Chloure de sodium est expliquée par des hypothèses qui prennent en compte les particularités de l'environnement arctique ainsi que la façon dont le sel est perçu à travers la culture Inuit et les modes de consommation traditionnels.
