Valor biológico de las proteínas de Amaranthus caudatus “kiwicha” de la Región La Libertad, Abril-Mayo 2018

In the present work of investigation, the biological value of the proteins of Amaranthus caudatus "kiwicha", of the Region La Libertad, of the province of Sánchez Carrión, was determined by means of the biological method of Net Protein Utilization (NPU), Digestibility (D) and Biological Value (VB); for this, 5 kg of Amaranthus caudatus "kiwicha", 10 specimens Rattus rattus, var. norvegicus, from 33 to 57 days of birth and 50 to 60 g of weight. One group was given a protein-free base diet and the other group the study food Amaranthus caudatus "kiwicha". The values obtained in average were the following: 86,26% Digestibility (D); 70,58% Net Protein Utilization (NPU) and 81,81% Biological Value (VB). From the analysis of the results it is concluded that of every 100 g of Amaranthus caudatus protein "kiwicha", the organism assimilates 82g En el presente trabajo de investigación, se determinó el valor biológico de las proteínas de Amaranthus caudatus “kiwicha”, de la Región La Libertad, de la provincia de Sánchez Carrión, mediante el método biológico de Utilización Proteica Neta (NPU), Digestibilidad (D) y Valor Biológico (VB); para ello se utilizaron 5 Kg. de Amaranthus caudatus “kiwicha”, 10 especímenes Rattus rattus, var. norvegicus, de 33 a 57 días de nacidas y 50 a 60 g de peso. A un grupo se administró dieta base libre de proteínas y al otro grupo el alimento en estudio Amaranthus caudatus “kiwicha”. Los valores obtenidos en promedio fueron los siguientes: 86,26% Digestibilidad (D); 70,58% Utilización Proteica Neta (NPU) y 81,81% Valor Biológico (VB). Del análisis de los resultados se concluye que de cada 100 g de proteína de Amaranthus caudatus “kiwicha”, el organismo asimila 82g Trabajo de investigación
