The urbanisation of the population leads to availability of the limited variability of food products. Could this be the only reason to this Americanization? Is it possible to create “gastronomy heritage” without tourism? Could the extreme cold offer anything else than dependency? Le contenu de l’assiette des Inuit n’est-il pas en train de donner raison à ceux qui craignent la dénaturation de l’alimentation par la mondialisation ? Alors que partout dans le monde, les résistances sont très fortes face aux stratégies des firmes agro-alimentaires, les Inuit sont entrain d’adopter une alimentation totalement étrangère, celle des Etats-Unis. Les contraintes d’approvisionnement liées à l’urbanisation de la population sont-elles les seuls responsables ? Et comment pourrait se mettre en place des formes de « patrimonialisation » alimentaire sans tourisme ? Les conditions de vie dans le froid extrême n’offrent-elles pas d’autre issue que la dépendance ?
