Summary:The purpose of this study is to transmit a piece of the great magic of Scandinavian cuisine, how are ingredients used, and how techniques are applied. The purpose itself is to transmit all the creative process made to create amazing and exotic dishes. The Scandinavian cuisine is a blend of a variety of influences, as they are the French cuisine and the cuisine from Lapland, presenting still authenticity and originality though all their flavors. The fresh, natural, and exquisite flavors predominate in Scandinavian Cuisine due to the fact that the ingredients are not transformed, but optimized, offering the best flavor as possible. The Scandinavian cuisine finds itself in a constant growth influencing other types of cuisine in a very deep way. In my opinion the richness of Scandinavian Cuisine has a lot to offer to the universal cuisine, exquisite secrets from this small Nordic region in Europe. El propósito de este trabajo de tesis es poder transmitir un poco de la magia de la comida escandinava, como se manejan sus productos sus técnicas, y en sí todo su proceso creativo. La cocina escandinava es una mezcla de muchas influencias, como son la cocina francesa y la cocina de Laponia, sin embargo todos los países de esta región ofrecen sabores auténticos y originales. La frescura, naturalidad y exquisitez, es un característica propia de la cocina escandinava, ya que esta se encarga de preservar los sabores de los ingredientes y optimizarlos de la mejor manera posible. La cocina escandinava se encuentra en crecimiento constante y en mi opinión el resto de gastronomía mundial tiene mucho que aprender de esta pequeña región del norte de Europa
