Fifty-one products were sampled and carefully examined macroscopically and histologically. The histological examination was also carried out on 31 muscle portions without macroscopic alterations. 25 samples (Group A), were parasitised by larvae of Gymnorhynchus gigas or Molicola (Gymnorhynchus) horridus. The lesions described for Group B (24 samples) as well as for 31 muscle portions without macroscopic alterations were attributed, to the freezing effect.
