Summary: | Several researches have demonstrated the potential of fungi to metabolize commercially important products, such as organic acids, alcohol, enzymes, biopolymers, biopharmaceuticals, among others. The objective of the work was the production of pharmaceutical compounds: biosurfactants and L-asparaginase In the study, several yeasts from the Antarctic continent were used to select microorganisms that produce biosurfactants, and also used different fungi to evaluate the production of L-asparaginase. Sixteen yeasts were used for the production of biosurfactants and nine different fungi for the production of L-asparaginase. For each microorganism, exploratory tests were carried out for the selection of strains producing biosurfactants by submerged fermentations and L-asparaginase by solid state fermentations. In the production of biosurfactants five yeasts proved to be suitable for production, especially Leucosporidium scotti, not yet mentioned in the literature as a producer of surfactant, which produced 7.5 g / L glycolipids. For the production of Aspergillus terreus L- asparaginase the best enzymatic activity was 414.89 U/kg, for two days of rice bran fermentation and addition of 4.5 mL water.
