The objective of this collective research conducted with the North-Eastern Federal University of Iakutsk (Republic of Sakha, Russia) is to document contemporary food practices. The local multicultural context associated to exogenous influences forces us to constantly reconsider the issue of the processes of patrimonialization and identity construction. Des modes de vie basés sur la consommation de certains produits dits traditionnels connaissent des adaptations, des hybridations qui contribuent à redéfinir les contours d’une identité collective via la constitution d’un nouveau patrimoine alimentaire. L’objectif de cette recherche collective, conduite avec la North-Eastern Federal University de Iakoutsk (République de Sakha, Russie) consiste à documenter les pratiques alimentaires contemporaines dans un contexte multiculturel ouvert à de multiples influences exogènes. Elle permet de revisiter la question des processus de patrimonialisation et des constructions identitaires qui y sont associées.
