The food colours E 110 and E 124 are used to produce the typical red colour of these products. An allowable limit of 500 mg/kg has been set for the sum of both colours but data on the actual concentrations are missing. In this study the results of colour measurements of various market samples are presented. Furthermore a study was undertaken to determine possiblechanges in colour concentrations during storage of typical products thereof in an house hold refrigerator. Johann Heinrich von Thünen-Institute, Federal Research Institute for Rural Areas, Forestry and Fisheries began publishing the Informationen aus der Fischereiforschung = Information on Fishery Research in 2010.
