Za neke vrste riba takvi podatci o biosintezi i elongaciji masnih kiselina ne postoje, iako je taj anabolički proces važan za poikilotermne organizme koji se pomoću toga prilagođavaju okolišnim promjenama temperature adaptirajući kompoziciju masnih kiselina u membranama mijenjajući njihovu fluidnost. Za jegulje je poznat sastav masnih kiselina, no za druge zmijolike ribe sastav je manje poznat, kao što je npr. ugor (Conger conger Linneaus, 1758). Rezultati ovog rada pokazuju da jegulja ima više lipida, no ugor ima bolji sastav lipida i veću količinu ω-3 i ω-6 masnih kiselina. Fatty acids are an important source of energy because a large amount of ATP is released during their decomposition. Fatty acids are being stored as fuel for the cells, participate in the structure of cell membranes and organelles and have the role of signaling molecules. Biosynthesis of fatty acids takes place in the organelles of the eukaryotic cells. For some types of fish such information on the biosynthesis and elongation of fatty acids do not exist, although the anabolic process is important for poikilothermal organisms as an adaptation to environmental temperature changes by changing the composition of fatty acids in the membranes of altering their fluidity. Eel has a known fatty acid composition, but for other snakelike fish the composition is less known, such as conger (Conger conger Linneaus, 1758). The results in this paper indicate that the eel has more lipids, but the conger has a better lipid composition and has more ω-3 and ω-6 fatty acids.
