We had a good deal of trouble skinning them round and barely got through by dusk. [Why is he skinning 'round' (a) because he has only his penknife, not a sheath knife, and hence could not 'paunch' the animal? (Or (b) He wants 'her as well as to stag to mount for the Museum, and further more the stag meat was not fit to eat' -- so paunching is not necessary.
