[Reverse] Sponge is a hard yeast cake, you make it from the cake. [image] ROYAL It was about 1/2 inch thick. You soaked it and made sponge with it. It was Royal Dry Yeast - Lever Brothers made it. Up to 60 years ago it was all liquid barm I never made a sponge until i went to Northern Bay (in 1936) [essentially words of informant] DICT.
