Summary:Tässä selvityksessä tarkastellaan viljeltyjen maustekasvien aromiainepitoisuuksia ja niihin vaikuttavia tekijöitä. Aromipitoisuudella tarkoitetaan haihtuvan öljyn pitoisuutta ja koostumusta. Yrttien viljely- ja laatututkimuksia on tehty Suomessa 1980-luvulta lähtien ja myöhemmin muissakin Pohjoismaissa. Aineisto käsittää lähes 190 julkaisua, joista suomalaisia on yli sata. Tavoitteena oli tutkia, luovatko pohjoiset olosuhteet edellytykset yrttien korkeille aromiainepitoisuuksille. Mukana on 13 mauste-, rohdos- ja aromikasvina käytettävää lajia. Pohjoisen pitkät ja valoisat kesäpäivät sekä päivä- ja yölämpötilojen vaihtelut luovat hyvät edellytykset aromiaineiden muodostumiselle. Pohjoisessa kasvatettujen yrttien öljypitoisuus ja -koostumus täyttävät yleensä kansainväliset laatuvaatimukset. Valo ei kuitenkaan yksin riitä, ratkaiseva merkitys on myös kasvukauden lämpösummalla. Pohjoisessa lyhyt kasvukausi ja alhaiset lämpötilat vähentävät kasvien satoa, joka on suoraan yhteydessä tuotettavan öljyn määrään. Aromiaineita on tarkasteltava kasvi-, vuosi- ja jopa komponenttikohtaisesti. Pohjoisten kasvilajien, kuten kuminan ja kamomillan, aromiaineiden pitoisuus ja laatu olivat yhtä hyviä kuin vastaavien Keski-Euroopassa tuotettujen kasvien. Väinönputkella nuo ominaisuudet olivat pohjoisissa olosuhteissa jopa paremmat. Viileään ilmastoon sopeutuneiden yrttien, kuten tillin, tuoksuampiaisyrtin ja kyntelin, öljypitoisuus ja -koostumus olivat myös erittäin hyviä jopa napapiirin korkeudella. Toisaalta piparmintun öljyn ja sen pääkomponentin mentolin pitoisuus Pohjois- Suomessa oli alhaisempi kuin Etelä-Suomessa. Lyhyempi kasvukausi ja matalampi lämpötila vähentävät perinteisten, lämpöä vaativien Välimeren yrttien satoa verrattuna Keski-Eurooppaan. Sadon öljypitoisuus ja -koostumus täyttivät kuitenkin laatuvaatimukset. Hyvälaatuista satoa saatiin meiramista, salviasta, timjamista ja iisopista. Ainoastaan sitruunamelissan öljypitoisuus oli pohjoisessa matalampi kuin Keski-Euroopassa. Vastoin vallalla olevaa käsitystä pohjoisessa tuotettujen yrttien aromipitoisuudet eivät yleensä olleet korkeampia kuin Keski-Euroopassa. Keski- Suomea pohjoisempana yrttiviljelyssä on kiinnitettävä huomiota erityisesti pohjoisiin oloihin sopeutuneiden lajien ja lajikkeiden valintaan, lämpöä lisäävien viljelyteknisten menetelmien, kuten harsojen ja katteiden, käyttöön sekä sadonkorjuun ajoittamiseen. Siten Suomessa voidaan tuottaa laadultaan hyvää yrttiraaka-ainetta monipuolisesti hyödynnettäväksi. In the 1980 s first in Finland and later in other Scandinavian countries several cultivation and quality experiments have been carried out on aromatical herbs. This survey summarizes data of the aroma content in herbs grown under Nordic climatic conditions and other effective factors. In this review the term aroma means the essential oil content and composition of the herb species. The reviewed material covers nearly 190 publications, of which 100 have been published in Finland . This study includes 13 plant species used as herbs, spices and medicinal plants The aims of this study were to evaluate whether the Nordic climate improves the aroma content and quality of the herbs. The long days in the north and the differences between day and night temperatures provide good conditions for the formation of aromatic compounds in the herbs. The essential oil quality and composition in herbs cultivated in the north usually meet the requirements of international quality standards. The crucial factor for the accumulation of biomasses and secondary metabolites in herbs is the effective temperature sum. In the north the short and cool growing season diminishes the biomass yield, which is strongly associated with the oil yield. The aromatic compounds are formed as a result of complicated processes. Therefore the evaluation of plant species and even specific oil components should be made species by species or even by individual aromatical compounds. The aroma content and quality in the endemic plant species grown in the north were as good (caraway, camomile) or even better (angelica) than in plants cultivated in the Central Europe. Herbs that were adapted to the cool climate (dill, dragonhead, savory) had a high essential oil content and good quality of the oil, even above the Arctic Circle. On the other hand, the oil content and its menthol concentration in peppermint were lower in Northern Finland compared with Southern Finland. Short and cold growing season in the North reduced the yield of conventional herb species (marjoram, salvia, thyme and hyssop) that require warmth, even though oil concentration and composition gained a good quality. The essential oil concentration in lemon balm was lower in the north than in the Central Europe. Contrary to the general belief, the herbs cultivated in the north are not usually more aromatic compared with herbs grown in Central- Europe. However, except in the very north areas, it is possible to produce herbal raw material with good quality for multifaceted exploitation. In Central Finland or in more northern latitudes special attention should be paid to the use of species or varieties adapted in the northern climate, and to timing the harvest.
