It may become necessary to be able to distinguish between raw fish for this new surimi from Alaska pollack. Here, we examined whether certain other fishes suitable for use in surimi can be distinguished from Alaska pollack by comparison of the SDS-PAGE pattern of myosin light chain prepared from their surimi. The SDS-PAGE patterns of hoki, Macruronus novaezelanidae; southern blue whiting, Micromesistius australis; Kingklip, Genypterus capensis; Nile perch, Lates niloticus; Chile jurel, Trachurus murphyi; dog shark, Mustlus griseus; requiem shark, Triakis scyllia; Japanese gray shark, Hemitriakis Japanica; and sting-ray, Dasyatis akajei were different, especily for myosin light chain-3, from the patterns from Alaska pollack.
