In den letzten Jahrzehnten konnten einige Nahrungsmittelinhaltsstoffe identifiziert werden, die das Risiko für vaskuläre Läsionen senken. Dazu gehören beispielsweise ungesättigte Fettsäuren. Mit Hilfe eines Arteriosklerose-Mausmodells wurde der vaskuläre Effekt von komplexen Nahrungsmittelinhaltstoffen aus Fisch und Kakao untersucht. Nach Fütterung der Mäuse mit westlichen Diäten, unter Zusatz des zu untersuchenden Nahrungsmittelinhaltstoffs, wurden die Blutgefäße der Mäuse morphologisch analysiert. Des Weiteren, wurden sowohl Daten zur Serumskonzentration als auch Genexpression ausgewertet, um lokale als auch systematische Effekte des jeweiligen Nahrungsmittelinhaltstoffes auf Arteriosklerose hin zu untersuchen. Food has been identified to be effective in reducing the risk of atherosclerosis. However, the effect of complex foods has been less investigated since most of these studies have applied either single nutrients or the extraction of food active ingredients. Therefore, the current work, in a mouse model of atherosclerosis, investigated the vascular effect of fish and chocolate liquor as commonly consumed complex foods. Animals ate semi-synthetic Western diets. Following the termination of animals, morphological analyses of descending thoracic aorta and aortic roots were performed to evaluate the atherosclerotic lesion development and composition. Also, serum parameters as well as gene expression data were analyzed to evaluate both local and systematic effects of complex foods intake on atherosclerosis.
