Rheological properties of muscles of the shrimps Pandalus borealis, Pandalus hypsinotus, Argis ochotensis were investigated by the means of penetration. Any dependence of the properties on broken stress and broken deformation was not revealed for all species. The maximum values of tensile strength had the muscles of Pandalus borealis, Pandalus hypsinotus had medium values of the tensile strength, and the Argis ochotensis muscles had the minimum tensile strength. Apparently, the lowered tensile strength of the Pandalus hypsinotus muscles can be explained by less closed wisp of muscle fibers packing. On the other hand, the Argis ochotensis muscles have a close arranging of the wisp of fibers, but low mechanical firmness of the fibers. Probably the high-complicated fiber structure of longitudinal and diametrical direction of shrimp muscles was the main reason of dispersion of the values of tensile strength in the experiment. The rheological properties were heterogeneous because of varying density of the wisp packing, fiber length, and their mutual arrangement. Bearing in mind the features of the muscles structure, several cases of the plunger penetration through the tissue were possible: direct break of fibers by the plunger; penetration of the plunger between fibers; and mixed version of the penetration. The maximum values of tensile strength corresponded to the destruction of muscle fiber bundles, and the minimum values of tensile strength corresponded to penetration between the bundles. To appreciate the contribution of the muscle structure, the shear-viscous rheological indices as storage module and loss module were determined. Both duration of storage and quantity of freezing had influenced on rheological properties. The values of the storage module and loss module of shrimp muscles decreased significantly after double freezing: 2025 % compared with control pattern after a period of 2 month freeze storage. In opposite, the double frozen stuffing from muscles of shrimp had no such decrease of the modules. Without double freezing, the rheological indices and dynamics of their changes were equal for the shrimp and its mince during 4 months of storage. The composition of main muscle proteins was investigated for Pandalus borealis. Correlation between actine and myosin content didn't depend essentially on biological state of shrimp and was about 18.8 %: 20.5 %, accordingly. That's why tensile strength values of the muscles of Pandalus borealis in fit and moult conditions hadn't any essential difference. However, elastic properties of the moult shrimp were less expressed, possibly because of changed character, strength, and direction of protein interactions: the values of loss module of muscles of moult shrimp were about 8085 % of the values of fit shrimp muscles. The results of rheological investigations show that the studied shrimp species are the objects with high structure-mechanical properties of muscles. The heterogeneity of shear properties of the shrimp muscles structure is determined by density of fibers packing, fibers length, and their mutual arrangement. Shear-viscous, cohesions properties of the muscles are determined by protein content.
