It was found that among migratory birds mallard duck is most polluted by dangerous toxicants – lead and cadmium, among non-migratory birds it is black grouse, and capercaillie is the least polluted game bird. Among game mammals, bear, badger and hare should be considered the most «ecologically unfavourable» ones. The proportion of meat samples with poor amount of copper (less than 5 mg/kg wet) ranged from 4 to 16.7% in hazel grouse, black grouse, beaver and arctic hare. Low concentrations of zinc (under 10 mg/kg wet) were characteristic of 60– 87% of bird meat samples and of 50% of meat samples of hare and moose. To ensure the safety of people – consumers of «forest gifts», it is necessary to restrict the use of liver and kidneys of quadrupeds and birds as food. It is necessary to compensate for the deficiency of biogenic elements in meat of game and agricultural animal production by changing rations.
