The white muscle fibres in fish compose the major part of the skeletal muscle, and are the most valuable part of the fish from the consumer view. It is what we eat. The fish farmer is concerned about the fish growing as fast as possible, where as the consumer is focused on the sensorical quality. Important quality factors in fish are texture, colour, fillet gaping, taste and flavour. There are several indications that white muscle fibre size and recruitment have effect on texture, fillet gaping and colour in fish (JOHNSTON et al., 2000; BJØRNEVIK et al., 2004), and controlling the muscle fibre number and size may be a way to influence flesh quality in fish. To examine the effect of restricted feeding on growth and muscle structure, farmed Atlantic salmon was fed two different feeding regimes from December 2004 to January 2006.
